Prep time: 2-3 minutes
Cook time: 15 minutes
- Cauliflower (rough chopped) 3 cups
- Cashews (crushed) ¼ cup
- Coconut milk ¼ cup
- Salt 1 pinch
- Pepper 1 pinch
- Cinnamon 1 pinch
Add all the ingredients to a pot and bring to a boil over medium heat. Reduce heat to low and cover with a tight-fitting lid. Simmer for 15 minutes and then remove from heat. Puree in a blender or food processor until smooth. Add 1 tablespoon of water at a time if necessary to get mixture moving. Serves 1 large or 2 small.
I was reluctant to give this recipe a try because I have never been a fan of cauliflower. If there is one vegetable that I’ve never been a fan of, cauliflower would be the one. I don’t know why I don’t really like it. Maybe because it is white broccoli… Anyway, it was super simple to prepare. You basically chop up the cauliflower, crush some nuts, add milk and put in a pot. The only responsibility that you have is to make sure you don’t let it boil too long once it reached its boiling point. Outside of that….EASY!
I admit, I think it was really tasty. The addition of coconut and cashews really brought out a subtle sweet taste helping it taste bland and dry. I know there are many other recipes for cauliflower, but I really like this. This mash will definitely make its rounds on our monthly menu! I suggest you give it a try.
