Tex-Mex Chicken & Rice (Credit: Precision Nutrition)
With little preparation, this recipe can be whipped up in no time! By using pre-cooked chicken breasts and rice, together with frozen peas and carrots and various vegetables, this meal is perfect when your day is filled with zoom meeting after zoom meeting along with zipping the kids to different activities!
- 8 oz Chicken Breast, pre-grilled/cubed
- 1 cup of Brown Rice, cooked measure
- 1/2 cup Frozen Peas and Carrots
- 1 stalk Celery, chopped
- 1/2 Medium Red Bell Pepper, chopped
- 2 TBSP BBQ Sauce
- 2 TBSP Guacamole
Just stir all ingredients, except the guacamole, together in a pot on medium-low heat, until everything is warm. It can also be nuked for a couple of minutes, if you must. Top with guacamole. Makes 1 serving.
